Shajapur. Malwa is called the region of cuisine. Its fame has also spread far and wide. Dal-Bafle is the most special among the flavors of Malwa. In this region, it is an everyday dish as well as a dish of special occasions and also of religious importance. For the last two generations, Vaishnav Bhojnalaya is doing the work of taking its taste to the people everyday. This restaurant is crowded by the lovers of Dal Bafla from morning till evening.
Vaishnav Bhojnalaya is situated at bus stand. Baffles drenched in ghee are served here for Rs.40. People also welcome the guests coming to their place with their pulses. There are also people who eat here two to three times a week. They say that the taste we get here, is not like that anywhere. Sunil Rathore, the director of this restaurant, says that 100 to 150 plates of baffles are installed daily and people get them packed and taken to their homes.
Rathore, who has been doing this work for the last two generations, told that the rate of this plate, which was Rs 20 for a long time, has now become Rs 40 in view of inflation. But the people who came here never complained about the price because the taste is like this. This is the reason that not only Shajapur but people from rural areas also reach to eat Vaishnav’s Baffle. Rathore told that as far as he remembers, from 1975 the work of Dal-Bafle started at his place. At that time, his father used to serve a plate to the people for Re 1. The prices have definitely increased but since then till now they have never compromised on the quality.
